Whole Chicken
Citrus wedges (Lemon, Tangerine, Lime, Orange)
Herbs (Sage, Rosemary, Oregano, Tarragon, Parsley)
Ghee or Olive Oils
Sea Salt
Fresh Cracked Pepper
Opt. Skin Rub

The fun part about this recipe is that you can combine any type of herbs with different citrus to make fun flavors.

Preheat oven to 400F.
Rinse and pat chicken very dry.
Fill cavity with citrus and herbs. Tie legs closed if you wish.
Rub the outside with oil or ghee.
Top with salt and pepper.
Add additional skin rub spices if desired.
Lay chicken in pan with breast-side down.
Bake for 1 hour. Turn oven down to 350F and flip chicken over.
Bake for additional 60-90 minutes, depending on chicken weight.
If you used an organic chicken, save the bones and pan drippings for making broth.
