12 lrg Scallops, rinsed and dried
12 strips Bacon
Opt. 1 tbl Honey
Preheat oven to 425F.
Place bacon in frying pan and cook until browning, but still pliable. Remove from pan and set on paper towels to cool.
If you’re going to add honey, put it in the frying pan with the bacon grease.
Place scallops on high-heat for 30-60 seconds on each side to sear and brown.
Remove scallops from pan and place on baking sheet to cool slightly.
When safe to handle, wrap one bacon strip around each scallop. Secure with toothpicks.
Back at 425 for 5-10 minutes, depending on thickness of scallop.
Finish with two minutes on broil for extra-crispy bacon.
Note: Serve with Mango Salsa and Horseradish Mashed Potatoes. (Save juices from baked scallops to stir into mashed potatoes.)
